Solution Description
Rebread operates in an innovative “open manufacturing” model, saving unsold bread from becoming waste and using it as a raw material instead. We offer R&D solutions on how to preserve and process the raw materials, adding value to the business. The key element of our activities is the marketplace, which enables connecting suppliers with customers and managing the circulation of raw materials in a short period of time – between the staling and moulding process or the expiry date. Our proposal is to set up a local Spanish marketplace and, based on our previous experience and contacts in one of the Spanish regions (Basque Country), to encourage local entities to redistribute unsold raw materials. This implementation will be linked to Rebread’s provision of the raw material preservation process under a free licence. The proposed solution, necessarily combined with the raw material preservation process we provide, allows the marketplace users to manage the circulation of unsold surplus bread and transform it into a raw material that can be used to create a new food product – e.g. by fermentation with lactic acid bacteria to produce a probiotic drink. Our solution also creates awareness that unsold bread is not (potential) waste,but a valuable raw material that should be reintroduced to the production processes.
